There is something about spaghetti squash that seems to pair so nicely with sausage, such as sweet Italian sausage and pesto, spicy chorizo and pico de gallo, or this recipe combines spaghetti squash, kielbasa and a simple tomato garlic sauce… the possibilities are endless! Sauce Ingredients:
- 3 Tbs olive oil
- 1 bell peppers, chopped
- 1 med onion, chopped
- 2 garlic cloves, chopped
- 2 tomatoes, roughly chopped
- garish with fresh basil or parsley
Directions:
1. Cook spaghetti squash following these instructions.
2. Cook kielbasa sausages in a large saucepan. When cooked, remove from pan. Slice and save for later.
3. Heat the oil in a large saucepan over medium heat, then add the onion, pepper and garlic. Add tomatoes and cook until the water is reduced and a nice sauce has formed. Add sausage back into pan and combine with sauce.
4. Serve with cooked spaghetti squash. Garnish with fresh basil or parsley.
