Chocolate Zucchini Cake

This is a tried and true favorite recipe from Kaarina’s family. I’ve evolved it into a gluten free recipe over the years and it is still just as enjoyed. You can make this recipe with regular flour as well, just decrease the buttermilk to 1/2 C.

Cream together:

  • 1/2 C butter, soft
  • 1/2 C oil
  • 1 3/4 C sugar

Beat in:

  • 2 eggs
  • 1 tsp vanilla
  • 3/4 C buttermilk

Combine:

  • 2 1/2 flour (I use 1 cup chickpea flour, 1 cup brown rice flour and 1/2 gluten free flour mix)
  • 1/4 coco powder
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1 tsp cinnamon
  • 1/2 tsp cloves

Combine wet and dry ingredients. Stir in:

  • 1/4 chopped nuts
  • 1/4 chocolate chips
  • 3 cups grated zucchini

Pour into 9×13 pan. Sprinkle with extra chocolate chops and nuts. Bake at 325 degrees F for 40-45 min.
