Sweet Pepper Taco Bites

Wednesdays are the highlight of our summer! The days spent at the distribution shed are never a waste, and it is always a joy to talk with share members as they pick up their veggies and chat about their week. My ears always perk up when someone comments on how their family has enjoyed what they’ve brought home. One busy mom shared a new recipe she created using sweet peppers and taco meat – easy and the family loved it. We tried her recipe and agree its a winner! Hope you enjoy it, too!

Ingredients:

  • Sweet peppers, cored and halved
  • Oil, to coat
  • Taco meat
  • Grated cheese

Directions:

  1. Preheat oven to 350 degrees F.
  2. Cut peppers in half, remove seeds and line on cookie sheet or oven safe pan. Prebake them for 20 min, until they begin to soften.
  3. Fill peppers with taco meat. Return to oven and bake another 20 min. Top with grated cheese and return to oven to melt. Enjoy!

    I am still loving the pasta sauce from your “paste tomatoes”. Why paste tomato instead of sauce tomato. Best marcella hazan recipe. Blanch them, put them in a pot with flavorings-i chose the one with garlic and basil, half hour later wonderful fresh sauce.
