Korean Spinach Salad

Week 16 Full Share

This is a Knisely family favorite, and is a pretty loose recipe, but delicious all the same. Forgive me for not having a picture of the salad itself, but it disappeared too fast to get a picture of it the last time I made it! A picture of this week’s share will have to suffice.

Salad Ingredients:
Mix amounts as desired in large salad bowl.
• Spinach
• Hard boiled eggs, sliced
• Sliced water chestnuts
• Bean sprouts
• Cooked bacon, crumbled
• Scallions or chives, chopped
Dressing Ingredients:
Mix in quart jar. Add dressing to salad just before serving.
• 1 Cup sugar
• 1/2 Cup olive oil
• 3/4 Cup tomato juice or V8 juice
• 1/2 Cup vinegar
• 1/4 tsp salt
• 1/2 tsp garlic powder
• 1 Tbs lemon juice
