Roasted Cauliflower with Jelly Glaze

Our cauliflower harvest is done for the year, but this is such a easy and tasty recipe we have to share it. It really hardly seems like a recipe either, it’s that easy!

Roasted Cauliflower in Bright Orange Jelly Glaze

1. Clean and trim leaves from one head cauliflower. Cut base so it stands easily by itself.

2. Smother liberally with choice of favorite jelly. Our favorites have been, Jalapeno Jelly or Pineapple Habanero Jelly. Something spicy is best!

3. Roast in 375 degree oven for 45min – 1 hour (depending on size of cauliflower) or until a sharp knife inserts easily into the cauliflower. Reapply jelly during cooking if it looks like it’s drying out.

4. Cut in wedges and serve hot. This dish pairs nicely with other roasted vegetables and meat. In the picture above, we served it with roasted garlic scapes and broccoli.
